Healthy Meat Dishes
Beef:
Veggie Meat Loaf
from St. Louis Days, St. Louis Nights
2 t olive oil
½ c chopped onions
1 cup shredded carrots
2/3 c shredded cabbage
¾ cup mix of green and red peppers
1 t minced garlic
1 egg
1 egg white
½ t salt and pepper
1 t basil
¼ t oregano
1 T worchestershire sauce
1/3 cup bread crumbs
1 lb lean ground beef
Saute veggies 10-15 minutes, cool. Combine remaining ingredients then add veggies, mix. Place in loaf pan. Bake at 350 degrees for 1 hour, drain and cook 15 more minutes. Portabello and Beef burgers
6 WW points per serving
12 oz ground beef
2 c finely chopped portabello mushrooms
3 t bread crumbs
1 T worchestershire sauce
1 t thyme
¼ t sea salt
¼ pepper
Gently mix ingredients and shape into 4 patties. Broil or grill 4-6 minutes per side.
Portabello and Beef Burgers 2
Make your beef hamburger patty 1/2 the thickness as usual. For each burger marinate 1 portabello mushroom in italian salad dressing. Grill burgers until desired doneness and mushrooms until slightly soft. Stack together for a double burger.
Baked Chicken Nuggets
4 boneless, skinless chicken breasts, cut into bite sized chunks or strips
2 slices whole grain bread chopped fine in food processor
1/4 c Parmesan Cheese
1/4 t sea salt
1/2 t basil
1/2 t thyme
1/4 c melted butter OR 2 eggs whisked
Combine bread crumbs with seasonings and cheese. Toss chicken in butter or egg, then coat with bread crumb mixture.
Bake on lightly greased cookie sheet 15-20 minutes at 400 degrees.
