Fudge Brownies:
4T unsalted butter
2/3 c natural unsweetened cocoa
1/2 c whole wheat pastry flour
1/4/ t baking powder
1/4 t salt
1 c sugar
2/3 cup sweet potatoe puree
1 large egg
1 1/2 t vanilla extract
Heat oven to 350 degrees. Melt butter, stir in cocoa and let cool. Whisk together flour, baking powder and salt, stir in sugar and sweet potatoe puree. then the egg. Add vanilla, stir in cocoa mixture. Spoon into buttered 8 inch pan. Bake until surface of brownies looks dry and inserted knife comes out with a few moist crumbs, about 20 minutes. Cool to room temperature before serving.
